No Sugar Added Black Cherry Almond Scones


One of the cool aspects about scones is that they are extremely versatile. You can make them plain or add any variety of fruits and nuts. Depending on what ingredients you choose, you can make a perfect treat for breakfast, lunch, an afternoon snack, or dessert. Like always, we never add sugar. This time, we’re going with cherries and almonds. What are you waiting for? Get baking!

Ingredients:

  • 2 1/2 cups flour
  • 2/3 tsp liquid stevia
  • 2 tsp baking powder
  • 1/3 tsp salt
  • 1/3 cup very cold butter, cut into pieces
  • 2/3 cups heavy whipping cream
  • 2/3 cups + 3 tbsp Black Cherry Zevia
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 cup dried cherries
  • egg wash – 1 egg and 1 tsp water, beaten
  • 1/4 cup slices almonds, for sprinkling
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat oven to 325°F
  2. In a large mixing bowl, combine flour, baking powder, and salt. Cut in butter with pastry blender
  3. In a medium mixing bowl, combine 1/3 tsp liquid stevia, heavy whipping cream, 2/3 cups Black Cherry Zevia, vanilla extract, almond extract, and mix. Pour wet ingredients into the large mixing bowl with dry ingredients and mix until moist
  4. Add cherries. Mixture will be very sticky
  5. Turn onto floured surface and knead 4 or 5 times with floured hands. Pat out to 1/2 inch thick and cut into wedges
  6. Brush tops with egg wash and sprinkle with sliced almonds
  7. Place on greased baking sheet
  8. Bake for 15 minutes, remove, and let cool on wire rack
  9. While scones are cooling, mix together 1/3 tsp liquid stevia, 3 tbsp Black Cherry Zevia, and Greek yogurt for glaze
  10. Drizzle scones with glaze and enjoy with a cup of tea
