Dark Chocolate Strawberry Fudge Brownies

These dark chocolate strawberry fudge brownies are not only flourless, but they’re also dairy free!

Ingredients

  • 1 cup almond flour
  • 1/3 cup coconut sugar
  • 1/2 cup cacao powder
  • 1/2 tsp baking powder
  • 3 eggs
  • 1/3 cup maple syrup
  • 1/2 cup coconut oil, melted and cooled
  • 1 1/2 cups strawberries (for jam)
  • 3 tbsp Strawberry Zevia (for jam)
  • 2 tbsp maple syrup (for jam)
  • 1 1/2 tbsp chia seeds (for jam)
  • 1/2 cup dark chocolate chips (mix-in)

Directions

  1. Preheat oven to 350°F and grease 8×8 baking dish
  2. To make the strawberry chia jam, combine strawberries, Strawberry Zevia, and maple syrup in a small sauce pan
  3. Bring to a low boil and simmer.
  4. Add chia seeds and mash the strawberries, leaving some chunks
  5. Stir for about 15 minutes until jam is formed
  6. To make the brownies, combine eggs, maple syrup, and coconut oil and mix with a hand mixer
  7. Add in almond flour, coconut sugar, cacao powder, and baking powder to wet mixture and mix
  8. Fold in strawberry jam and dark chocolate chips into brownie mixture
  9. Bake for 25-30 mins or until toothpick comes out clean
