Paleo Donuts with Key Lime Frosting

Skip the gluten, grain, dairy, and sugar and whip up this better-for-you donut!

Ingredients

  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/4 almond flour
  • 1 tsp baking soda
  • 1-2 tbsp ghee
  • 4 tsp lime juice
  • 1 can Mountain Zevia
  • 1/4 cup coconut butter (softened)
  • 3 tbsp maple syrup
  • lime zest (for garnish, optional)

Directions

  1. Preheat oven to 375°F
  2. Zest 10-15 limes for garnish (optional)
  3. Combine eggs, 1 tsp lime juice, 1/4 cup Mountain Zevia, 2 tbsp maple syrup, and vanilla extract in a medium bowl. Whisk until combined
  4. In another bowl, combine salt, almond flour, and baking soda. Whisk until combined and free of clumps
  5. Combine wet and dry ingredients and mix until combined
  6. Grease a donut pan with ghee and use a piping bag to fill donut molds 3/4 full
  7. Bake for 10-12 minutes or until toothpick test comes out clean
  8. While donuts are in the oven, combine 3 tsp lime juice, 2 tbsp Mountain Zevia, coconut butter, and 1 tbsp maple syrup in a bowl and whisk
  9. If the frosting is too thick, whisk in some water by the tablespoon to lighten
  10. Let donuts cool after baking
  11. Gently dip them into the frosting and enjoy or store in the fridge
