Zevia Apple Celebrations Tart

Celebrate Thanksgiving with the most adorable dessert you've ever seen!

Ingredients

  • 8 oz cold butter
  • 4 tbsp ice water
  • 1 1/4 cups all purpose flour (a bit extra to roll the dough)
  • 2 1/2 cup Zevia Sparkling Apple Celebrations
  • 3 1/2 tsp stevia
  • 4 Honey Crisp apples
  • 1/2 cup lemon juice
  • 1/2 cup ground cinnamon
  • 1 orange (optional, for turkey design)
  • 2 mini dark chocolate chips (optional, for turkey design)
  • 5 apples in various colors (optional, for turkey design)

Directions

  1. To make the crust, dump flour into a heap on a cool counter and add chunks of cold butter on top. Press down on butter with your off hand to thin butter and combine it into the flour
  2. Evenly distribute butter into the flour and use a dough scraper in your other hand to fold and cut butter. Pull flour from edges with the tool and work the dough until crumbly
  3. Make a well in the middle of the dough and slowly add ice water, while blending together with your hands.
  4. Split the dough in half and form a ball with each. Wrap both balls tightly in plastic wrap and flatten into disks. Refrigerate for at least an hour
  5. Lightly flour a surface and roll out one of the disks to roughly 11 or 12 inches. Place it in a tart dish and press the dough into the bottom and sides
  6. Roll the extra dough around the edges and crimp the sides. Poke some holes in the bottom with a fork, wrap tightly with plastic wrap, and put in the freezer for half an hour
  7. Preheat oven to 350°F. To make the glaze, heat a saucepan to medium heat and cook 1 1/2 cups Zevia Sparkling Apple Celebrations for about 30 mins. Mix in 1 1/4 tsp stevia until it dissolves and set aside
  8. For the filling, peel, cut, and core the 4 apples. The apples should be cut in 1/8ths
  9. Mix 1 cup of Zevia Sparkling Apple, sliced apples, and lemon juice in a bowl and let soak for about 15 mins. Drain the liquid and add in the cinnamon and 2 1/4 tsp stevia and toss to coat the apples
  10. Fill or layer the apples in the dish as desired. We laid ours out relatively flat
  11. Brush the edges of the crust with egg wash and bake for 35-40 mins until crust is golden brown and the apples are soft and let cool. Brush the apples with glaze
  12. Preheat oven to 425°F. Lightly flour a surface and roll the second disk of dough out (about 1/8″ thick)
  13. Feel free to design it with a cookie cutter and place it on a parchment paper lined baking sheet. Brush cut outs with egg wash, sprinkled cinnamon stevia mixture on them, bake for about 6 or 7 minutes
  14. Let the piecrust cutouts cool for about 15 mins and decorate the outer edge of the tart
  15. To make the turkey, cut two 4″ circles and one 3″ circle out of the second disk of pie dough. Cut one of the 4″ circles in half for the wings. Brush all parts with egg wash and cinnamon stevia mixture too. Let cutouts cool
  16. Using a leaf shaped cookie cutter, cut about 26 small leaves out of the apples. Cut the feet and beak out of the orange peel with a sharp knife
  17. Cut the snood (red part of a turkey’s beak) with the same method. Arrange the circles for the body, adding the feet and facial features. Arrange the apples in a pattern radiating out from the turkey, or whatever pattern you’d like
