Zevia Ginger Spice Muffins

Skip the store bought muffins and make your own with Zevia Ginger Ale!

Yield:

Ingredients

  • 1 tbsp coconut oil (melted)
  • 1 cup almond flour
  • 1/4 cup date sugar
  • 1/4 tsp pink Himalayan sea salt
  • 1/2 tbsp baking powder
  • 1/4 cup apple cider
  • 1/4 cup Zevia Ginger Ale
  • 3/4 cup unsweetened vanilla almond milk
  • 1 apple
  • 1 egg
  • 1 tsp vanilla extract
  • handful almonds
  • dash of cinnamon
  • dash of ginger

Yield:

1 batch

Directions

  1. Preheat oven to 425°F
  2. Grease a mini cupcake pan with coconut oil or line with cupcake papers
  3. Combine almond flour, date sugar, sea salt, and baking powder in a bowl
  4. Chop the apple and saute in a pan. Set aside and let cool
  5. In a separate bowl, mix together apple cider, Zevia Ginger Ale, almond milk, egg, and vanilla extract with a hand mixer
  6. Combine liquid and dry ingredients and whisk until combined
  7. Add in sauteed apples and walnut pieces and mix
  8. Fill muffin slots 2/3 full
  9. Top with more walnut pieces and a dash of date sugar
  10. Bake for 15-20 mins or until golden brown
