Zevia Strawberries and Cream Soda Cupcakes

These cupcakes truly are a match made in heaven!

Ingredients

  • 2 cans Strawberry Zevia (for frosting)
  • 1 tbsp stevia (for frosting)
  • 1 cup diced strawberries (for frosting)
  • 16 oz package cream cheese (for frosting)
  • 12 tbsp melted, unsalted butter
  • 1 banana
  • 1 tbsp vanilla
  • 1 cup Zevia Cream Soda
  • 2 eggs
  • 2 cups cake flour
  • 1 1/2 tsp stevia
  • 1 tbsp baking soda
  • 1/4 tsp baking powder
  • 1 tbsp salt

Yield:

Directions

  1. To make the frosting, combine Zevia, 1 tbsp stevia, and strawberries
  2. Boil ingredients for approximately 30 minutes, stirring often, until mixture turns into a syrup
  3. In a stand mixer, combine hot syrup and cream cheese until smooth
  4. Cool and apply to a cold cupcake with a knife or piping bag
  5. To make the cupcakes, preheat oven to 350°F
  6. In a stand mixer, combine banana and butter until smooth
  7. Add vanilla, cream soda, and eggs and mix until combined
  8. Drink the rest of the Zevia (because it’s delish)
  9. Add the cake flour, stevia, baking powder, and salt until combined
  10. Insert paper baking cups to the cupcake pan (or grease the cupcake pan)
  11. Pour the cake mix in so each slot half full
  12. Bake for 20 minutes or until toothpick test comes out clean
  13. Once finished, let them cool completely before applying frosting
