Zevia Cherry Cola Chocolate Brownies

Most of us have eaten brownies made from a store-bought mix at some point in our lives. For us, those days are long gone. This might ruin your day, but a boxed brownie mix can contain over 320 grams of sugar. That’s nearly 3/4 of a pound. On top of that, the ingredient list is a mile long, even including artificial flavoring. We like to keep our recipes clean and we know you’re with us. This recipe includes Zevia Cherry Cola – and makes the most deliciously moist brownies you’ve ever tasted.

Cake Ingredients:

  • 2 1/4 cups flour
  • 1/3 cup cacao
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup butter (softened)
  • 1 cup stevia (equivalent to 1 3/4 cup sugar)
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 can Zevia Cherry Cola

Glaze Ingredients:

  • 1/2 cup butter
  • 1/2 cup cacao
  • 3/4 cup Zevia Cherry Cola
  • 1 cup pecans (toasted and chopped)
  • 2 tsp liquid stevia
  • 1/2 tsp almond extract

Coconut Cream Ingredients:

  • 1 can full-fat organic coconut milk (refrigerated overnight)
  • stevia equivalent to 1 tbsp sugar
  • 1 tsp vanilla extract

Cake Instructions:

  1. Preheat oven to 350°F. Spray a 9in x 13 in baking pan with baking spray. In a mixing bowl, combine flour, cacao, salt, baking soda, and whisk together
  2. In a separate bowl, combine butter, stevia, vanilla extract, almond extract and whisk together with a hand mixer
  3. In the bowl with the wet mixture, add the eggs and whisk again with the hand mixer
  4. In a third bowl, combine buttermilk and Zevia Cherry Cola and mix. Add this mixture to the wet ingredients and mix to combine.
  5. Combine wet and dry ingredients and whisk together with a hand mixer
  6. Spread evenly into the baking pan, ensuring that there are no bubbles
  7. Bake for 40-45 minutes or until toothpick test comes out clean

Glaze Ingredients:

  1. Combine butter, cacao, and Zevia Cherry Cola in a saucepan. Bring to a boil until melted and remove from heat
  2. Add in pecans, liquid stevia, and almond extract and stir to combine
  3. Pour glaze over  warm cake immediately and let cool before cutting
  4. Once cut, enjoy with a side of whipped coconut cream

Coconut Cream Instructions:

  1. Scoop out the coconut cream into a large bowl, omitting the water in the bottom
  2. Using a mixer set on high, whip the coconut cream for 3-5 minutes until fluffy, then mix in your stevia and vanilla
