Soba Noodle Salad with Zevia Mango Ginger Energy Dressing

Meals made with Zevia are our favorite. They’re awesome because they’re way better for you than the traditional version. For example, most salad dressings have loads of hidden sugar. That’s not exactly the most dietetic option. The salad dressing  here is made with Zevia Energy, so it’s completely sugar-free! That’s not even the best part, though. This vegan meal is super easy to prepare. This one in particular takes a mere 10 minutes to make!

  • 1/2 cup fresh mango
  • 1 tsp chili sauce
  • 2 tsp water
  • 3 tsp sesame oil
  • 1/2 tsp fresh ginger
  • 2 tbsp Zevia Mango Ginger Energy
  • 3/4 cup cooked soba noodles
  • 1 zucchini
  • 1 tbsp sesame seeds
  • 1 avocado (sliced)
  • 1 carrot (shredded)
  • 3 tbsp unsalted peanuts (crushed)
  • cilantro (for garnish)


  1. Blend together mango, chili sauce, water, sesame oil, ginger, and Mango Ginger Energy in a food processor until smooth
  2. Set dressing side in a small container
  3. Rise cooked soba noodles under cold water in a strainer
  4. Spiralize zucchini and sauté for roughly 3 minutes
  5. Split up the soba noodles, zoodles, sesame seeds, avocado, carrots, and peanuts in two separate bowls
  6. Add dressing as desired and enjoy
