Things We Love: Pumpkin Flavored Everything!

It's finally the best season ever. Nope, not fall. We're talking about pumpkin season! The pumpkin spice craze is in full effect and we're totally on board with embracing it. Whether you want to go all out and make a full 3 course pumpkin themed meal or just feel a hankering for a little something pumpkin flavored, we've got a recipe for every occasion!

Snack/Appetizer: Pumpkin Hummus

Ingredients:

  • 2 cans garbanzo beans (drained)
  • 1 can (15 oz) pumpkin puree
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 3 cloves garlic
  • 3/4 tbsp salt
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • Pinch of paprika

Instructions:

  1. Pulse garlic cloves,  lemon juice, salt, and tahini in a food processor until smooth
  2. Add olive oil and garbanzo beans. Pulse until smooth
  3. Add ground cumin, pumpkin puree, and cayenne pepper. Blend until smooth
  4. Transfer to container, cover, and refrigerate for 2 hours
  5. Garnish hummus with paprika before serving

Main Course: Pumpkin Ricotta Stuffed Shells

Ingredients:

  • 12-14 jumbo pasta shells
  • 1 1/4 cups fat-free ricotta
  • 3/4 cup pumpkin puree
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 2 tbsp dried basil
  • 1/4 tsp ground sage
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup pasta sauce

Instructions:

  1. Cook pasta shells, drain, and separate onto baking sheet and let cool
  2. Preheat oven to 350°F
  3. In a bowl, mix ricotta, pumpkin, Parmesan, and spices (save 1 tbsp Parmesan)
  4. Spread pasta sauce in the bottom of a baking dish
  5. Fill each shell with 3 tbsp of pumpkin-ricotta mixture, and place together in baking dish
  6. Cover the baking dish with foil and bake for 30 mins
  7. Remove from the oven, sprinkle remaining Parmesan cheese on top, and bake for another 15 minutes

Dessert: Simple and Easy Pumpkin Dip

Ingredients:

  • 16 oz container frozen whipped topping (thawed)
  • 5 oz package instant vanilla pudding mix
  • 1 can (15 oz) pumpkin puree
  • 1 tsp pumpkin pie spice

Instructions:

  1. In a bowl, mix pumpkin pie spice, vanilla pudding mix, and pumpkin puree
  2. Fold in frozen whipped topping and chill until served

Bonus cocktail! Pumpkin Pie Martini:

Ingredients:

  • 2 oz spiced rum
  • 1 oz Zevia Cream Soda
  • 1/4 cup pumpkin puree
  • 1/4 cup water
  • 1/4 tsp stevia
  • Dash of cinnamon

Instructions:

  1. To make pumpkin simple syrup, combine and simmer pumpkin puree, water, and stevia. Put pumpkin simple syrup in a glass container and cool
  2. Mix together spiced rum, Zevia Cream Soda, and 2 oz of the pumpkin simple syrup
  3. Pour into a martini glass and garnish with a dash of cinnamon
