Raspberry Lime Chocolate Cake

Raspberry is a perfect addition to any chocolate cake. Now, what if we told you we made it with no sugar and Zevia Raspberry Lime Energy? Thanks to the help of Foodness Gracious, we've got the perfect excuse to have ourselves a slice of cake first thing in the morning. 


  • 2 cups all purpose flour
  • Stevia equivalent to 1 cup sugar
  • 1 cup Zevia Raspberry Lime Energy
  • 1 stick butter
  • 1/2 cup canola oil
  • 1/4 cup dark cocoa powder
  • 2 eggs|1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 tsp baking soda


  1. Preheat the oven to 350°F and line a 13 inch by 9 inch pan with parchment paper.
  2. In a large mixing bowl, mix together the flour and stevia.
  3. In a pot, bring the Zevia Raspberry Lime Energy, butter, oil, and cocoa powder to a boil. Remove from heat and mix into the mixing bowl with the dry ingredients.
  4. Add the eggs and vanilla to the mixing bowl and stir to combine. 
  5. In a small mixing bowl, combine the buttermilk and baking soda and add it to the chocolate mixture in the large mixing bowl.
  6. Pour the batter into the prepared pan and bake for about 40 minutes or until toothpick test comes out clean.
