Vegan Lemon Poppyseed Bread

This vegan dessert with no added sugar is sure to satisfy your sweet tooth without helping you pack on the pounds thanks to Heart of a Baker


  • 1 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/4 tsp poppy seeds
  • 1 ripe banana
  • 1/3 cup coconut oil, melted
  • stevia equivalent to 3/4 cup sugar
  • 1/2 tsp vanilla extract
  • juice and zest from 2 lemons
  • 1/2 cup Zevia Lemon Lime Twist


  1. Preheat oven to 350°F
  2. Grease and line a loaf pan with parchment paper|In a large mixing bowl, whisk together flour, salt, baking powder, baking soda, and poppy seeds and set aside
  3. In a medium mixing bowl, mash the banana and mix in the coconut oil, stevia, vanilla extrac,t and lemon juice with a hand mixer for about 30 seconds until smooth
  4. Gently combine wet and dry mixtures using a spatula to fold together
  5. Add in Zevia and continue to fold until combined completely
  6. Transfer mixture to loaf pan and bake for 40-45 mins until toothpick test comes out clean
