Zevia No Sugar Added Coconut Cola Donuts Recipe

Coconut Cola Donuts

Mini donuts are better than regular donuts for one simple reason: you can eat more of them! Thanks to Haute Sucre, you can really indulge since all of these are made with no added sugar. Bon appetite!

Yields: 18 mini donuts

Directions

  1. Preheat oven to 350°F.
  2. In a small bowl, combine and whisk the flour, baking powder, salt, and vanilla bean powder. Set aside.
  3. In a medium bowl, combine and whisk the egg, softened butter, and stevia.
  4. Slowly fold in the wet mixture to the dry mixture. Add in the coconu tmilk and gently fold.
  5. Add the Zevia Cola in and fold quickly.
  6. Spoon the mixture into a donut pan and bake for about 20 minutes. Let cool for 15 minutes and transfer to a wire rack.

Chocolate Ganache

  1. In a medium heatproof bowl, warm the coconut milk in the microwave for a minute.
  2. Pour the hot milk over chocolate and whisk until smooth.
  3. Drip the top of the donuts into the ganache. Set on a sheet of parchment paper.
  4. Top off with raspberries, if desired. Enjoy!

Ingredients

  • 1 large egg
  • 1/2 cup butter, softened
  • stevia equivalent to 1/3 cup sugar
  • 1 1/4 cup all purpose flour
  • 1/2 tsp baking powder
  • pinch of salt
  • pinch of vanilla bean powder
  • 1/4 cup coconut milk
  • 1/3 cup Zevia Cola

Chocolate Ganache

  • 1/2 cup stevia-sweetened dark chocolate
  • 1/4 cup coconut milk
