Lime Pomegranate Chia Parfait

Step up your pudding game with this delicious, nutrition dessert!

Yields: 1 serving

Directions

Chia Layer

  1. Mix chia seeds with Zevia and coconut yogurt. Stir together and let set for 10-15 minutes or overnight in the fridge to gel.
  2. Break the activated charcoal capsules and mix the powder with the chia pudding.

Cashew Cream

  1. Rise and drain the soaked cashews and put them in a blender/food processor with Zevia, pomegranate arils, and vanilla. Blend until smooth.

Assembly

  1. Pour 1/4 cup coconut yogurt at the bottom of the glass.
  2. Layer with half of the chia pudding mix, the rest of the coconut yogurt, and the remaining chia pudding.
  3. Add the pomegranate arils, reserving some for topping. Pour the cashew cream on top, garnish with lime slices, and a bit of pomegranate arils. Enjoy!

Ingredients

  • 1/2 cup coconut yogurt
  • 1/4 cup pomegranate arils

Chia Layer

  • 3 tbsp chia seeds
  • 3/4 cup Zevia Lemon Lime Twist
  • 1/4 cup coconut yogurt
  • 3 activated charcoal capsules

Cashew Cream

  • 1/2 cup cashews, soaked for 2+ hours
  • 1/2 cup Zevia Lemon Lime Twist
  • 1/4 cup pomegranate arils
  • 1/2 tsp vanilla bean powder (or vanilla extract)
